Farro Salad

Farro Salad with Cucumber, Melon, and Feta

This is a pretty easy and very tasty salad, hearty enough for a main dish or perfect as a side.

Ingredients

  • 1 3/4 cups farro uncooked
  • 3 cups cucumber thinly sliced into half moons
  • 2 cups cantaloupe cut into 1 inch cubes
  • 2 cups cherry tomatoes halved
  • 2 Tablespoons shallot or sweet onion chopped fine
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 teaspoons chives finely chopped
  • slat and pepper to taste
  • 1 cup Feta crumbled
  • 1/3 cup fresh mint chopped small

Instructions

  • Bring a large pot of water to boil. Add salt and farro. Cook until tender, about 25 minutes. Drain and run cold water through strainer to cool completely. In a large mixing bowl, add cooked farro, cantaloupe, cucumbers, onions or shallots, and tomatoes.
    In a small bowl, combine the olive oil, vinegar, chives, salt, and pepper. Whisk until well blended. Pour over farro combination and stir until combined. Add Feta and mint and stir just until blended.
